Watermelon, Feta and Power 4 Salad

This week, it’s all about summer!

 Happy summer!

I can’t believe it’s already August. After Simply Ming wrapped in June, I took some time off to spend with my family and well, here we are! Sneak peak at our fun teaser for Season 17 here: https://www.ming.com/season-17. I hope you are all having a fantastic summer!

For me, summer is all about quick, easy and delicious meals. This week’s recipe delivers on all three factors. I’ve kept it nice and simple, but I encourage you to top it with your favorite grilled protein, add in some marinated beans, toss in some lentils or bring this to your next barbecue as a side dish. If you have extra time, you could even grill the watermelon as slices ahead of time for extra flavor right as your protein is finished cooking.

This has been my go-to side dish all summer long. I love the contrast of the creamy salty bite of the feta matched with the juicy crunch of the watermelon. Plus the fresh mint and a little lemon juice go a long way to elevate such a simple dish. Toss everything with B&W Power 4(arugula, baby spinach, watercress and baby red leaf kale) for a little extra bite and nutrition. Pro tip, when looking for a watermelon, make sure it’s firm, heavy and symmetrical and doesn’t have any major bruising or soft spots. Now that you know how to pick a good watermelon, I’ll let Becca, my Registered Dietitian/PR guru take over from here, to tell you why this one is a nutrition hit!

Notes from Becca:

Thanks Chef! This dish really is summer in a bowl and I can’t wait to make it. Besides being 90% water, watermelon is actually really nutrient dense. It’s full of fiber, vitamin c, choline, and vitamin A. Did you know watermelon contains l-citrulline, a compound researchers have found may help reduce muscle soreness and improve recovery time? Summer snack tip-keep some frozen watermelon slices in your freezer as a snack post workout to help reduce inflammation and keep you hydrated.
