Breakfast Egg Wrap with Goat Cheese and Power 4 Greens

This week, it’s all about breakfast.

Recipes and techniques are the bread and butter to chefs. We learn one technique, use it, transform it into, change flavor profiles and turn what we learned into something completely different. A classic technique to master is the omelet. So simple, yet can also be so easy to mess up. Here, I’ve taken one of the classics and created a twist so that you can bring it with on the go for those busy mornings.  

This recipe actually started as a concept for an on-the-go breakfast wrap. I loved the idea because it’s allergen friendly and wanted something my kids could take with on the go that was filling. I first made it years ago when they were in elementary school with more simple flavors. About two years ago, when choosing my dishes for Simply Ming, I wanted to do a type of a wrap because great chef and friend Rick Bayless was joining me for a show all about tacos. I thought of the omelet idea again and I wanted to create it with an elevated touch. This recipe today is fairly similar to the one on the show, which you can find here (Rick Bayless Simply Ming Episode), just with a different filling. In comparison to a regular omelet, the use of rice flour helps to make it more crepe like. It becomes the perfect low carbohydrate on-the-go breakfast wrap and the best part is the omelet is the actual wrap. Just be careful not to overfill it, as it might get a bit messy! Thanks Chef! I love this one because it really is a great nutrition bang for your buck. Not only do you get great protein from the eggs, but you also get a ton of vitamins and minerals from the Power 4. Plus, it’s incredibly allergen friendly, which makes it a great breakfast option for those that have food allergies. I love that you used whole eggs here as well. Eggs aren’t just great sources of protein. Did you know they are good sources of omega-3 fatty acids and antioxidants? Omega-3 fatty acids are important in lowering blood triglycerides and antioxidants are important for reducing overall inflammation. 

Eat Well With Ming: Using the omelet instead of a tortilla is great for high protein and low carbohydrate on the go breakfasts.

Breakfast Egg Wrap with Mushrooms, Goat Cheese & Power 4 Salad

Serves 2

4 eggs
Kosher salt and freshly ground black pepper
1 tablespoon water
1 tablespoon minced cilantro
2 tablespoons minced jalapeno 
2 bunches scallions, thinly sliced, green and white separated
3 ½ tablespoons rice flour
1 cup B&W Power 4 
1 ounce goat cheese, crumbled

1.    Beat the eggs and water together. Season with salt and pepper to taste. 
2.    Add in cilantro, jalapeno, rice flour and scallion greens. Whisk to combine. 
3.    Heat 2 medium sauté pans on medium heat. Add 1 teaspoon grapeseed oil to each. Split batter between 2 pans and make sure you pour evenly. 
4.    Cook until golden brown, and then flip once. 
5.    As the egg cooks, in a wok add 1 teaspoon oil and scallion whites. Sauté 1-2 minutes to allow the scallions to start softening. Turn the heat off, add the power 4 and stir gently just to slightly soften. Set aside. Add the goat cheese. 
6.    Once the other side is cooked, remove to separate plates and fill with watercress and goat cheese and enjoy!
